I’m almost there. Started early in the morning around 8.30am, aside breaking for lunch, I end around 6pm. That’s all for pineapple tarts moreover I do not have any more pineapple paste left, use up 3kg this round, I probably bake around 600 tarts this CNY. And the funny thing is an initial calculation shows that I’m “suppose” to have 1/2 kg pineapple paste left but my family drop little surprises, let’s give this so and so a bottle so I’m only left with 2 miserable bottles for my own house. The momentum build up after a while, the dough texture is there, the mould is good and the speed is fantastic but by that time you realise it’s almost done.
I have another session due later, need to start on almond crips! I hope my hand is still “mine” tomorrow.
