I wanted a fail-proof bake after numerous failed attempts so I choose LeeLee’s Butter Cake. Hers is different from Angie cos this is like a typical butter cake but minus away the heaviness, the texture is more compact and not as crumbly. Well, no right or wrong, just wat you like 😛
Baked this loaf tin at 150 degrees (oven thermometer) for 45 mins, somehow the oven is still short of 10 degress even thou I set at 160 degrees but at least the temperature does not fluctuate. I will push the temperature slightly higher next time since this oven is suppose to reduce baking time.
Finally I dun hv any more swimming pool in my cake – the inside is fluffy and cooked! The crust outside is also a little crisp, just nice. You can’t believe how good I feel to see a successful bake cos I start to wonder if I know how to bake!
This recipe is definitely a keeper and knowing that it won’t fail but the next time I bake I must remember to fill only half of the size cos this cake rise quite a lot. I prepare another round with Oreo Cookies in muffin cups for colleagues tmr.
