Sis ask for fruit loaf so I use this recipe – EZ Fruit Loaf and bake it in my new silicone loaf tray. I always find fruit mix bought is very sweet and has a certain taste so I will do a quick soak in the water before using it (if it’s added to butter cake, I will soak it in boiling water for a while to dilute the sweetness and also pump up the fruit so it not “compact” when you bake). This recipe indeed is easy, boil the fruit mix, water and sugar together. Remove from heat, add in butter and another cup of cold water and set aside till cool. It’s important to ensure the mixture is completely cold before adding in self-raising flour and spices, you could even prepare the mixture a day before. Add in the flour and spices and bake at 200 degrees for 90 mins. It’s definitely a breeze to remove the loaf from the silicone tray.
I set my oven to 200 degrees but it’s done in an hour, skewer is clean and the inside is soft.
Went to Gim Hin Lee this afternoon to replenish my supply, bought Golden Churn Butter, self-raising flour, Hershey Cocoa Powder (more brownies coming along), mixed fruits, walnuts, hazelnut and baking trays! Bought my first silicone loaf tray since I dun have any loaf tray, pizza tray so I could bake 2 trays at a go and a smaller round springform tin.
