It’s a birthday month for our family in May. I thought something chilling and refreshing will match the extremely hot weather recently and there I am attempting this “cake”. Digestive biscuit as the base, the filling is marshmallow + whipped cream + milk and lastly top with peaches and jelly. My family were initially skeptical of the marshmallow filling but were quickly won by it when they had the first bite! Compared to the cream cheese version I attempted last year, they prefer this, it taste lighter. Definitely a keeper and it’s much easier to prepare!
