Blackforest Cake

While I certainly look forward to bake a whole cake and frost it with pretty decorations, it’s not every weekend you could do that. The amount of cream that is used to frost the cake is too much for normal consumption. I’ve a dear colleague who birthday is coming and it just look like the perfect opportunity for me to play practise! As much as I want to enjoy the process, I got stress over it! I could not decide which variation to use, should I do black forest, should I do chocolate mousse or should it be a cheesecake and how should I decorate it? The more I try to research, the more confuse I am and in the end, I decide to stick back the black forest cake with simple decoration 😛

The preparation and baking process went on pretty smoothly, the cake rose beautifully and there wasn’t a simple crack on the top of the cake (which I often encounter). I even manage to cut the cake into an even half without the help of the Wilton Leveler. The nightmare begin when I start preparing the non-diary whipping cream, I’ve read good reviews about this particular brand and was all hopeful to use it. I read the non-diary whipping cream won’t be overwhip but I start seeing the should-be-smooth whipping cream became in pieces! I add a fair bit of whipping cream, gave it a quick whip to kinda restore back to the normal stage but it wasn’t easy to frost anymore, the texture has somehow became rough. I used it to sandwich the pitted dark cherries and for the thin layer outside of the cake. I left the cake in the fridge for a while and whip up another batch, taking care not to overwhip but after leaving the cream outside for a while it became watery! Should it be like that? The last brand I use wasn’t like that, it was pretty easy to frost and it didn’t turn watery just like that and to think that this brand cost more! Looks like I don’t have much choices as there isn’t many non-diary whipping cream in the market and I don’t like the taste of diary whipping cream.

Putting all these aside, I’m satisfied with the frosting, the surface was smooth, at least it look better than the last one.

    May I know what was the previous brand you used that didn’t turn watery? I find that this brand of non-dairy whipping cream I use will become watery and grainy after leaving it for a while.
