I’ve receive many enquires about the chiffon mould and knife. I will be doing a one-time order for the heart shape chiffon mould, comes in 2 sizes – 7″ and 8″. It may not look wide on a whole but they are taller and deeper comparing to local moulds so 7″ may be a little small. For the 8″ which is what I’m using, I’ve use 5 egg yolks/7 egg whites, the chiffon will rise all the way to the tube and 3 egg yolks/4 egg whites which will fully rise all the way to the brim of the mould. These moulds are by Cakeland and made in Japan.
For the chiffon knife, it’s a very slim and long plastic knife which is also made in Japan for removing chiffon from the mould. The slimness of the knife will help you to slide through the side of the cake effortlessly, at the same time not destroying the crust of the cake and also your cake tin surface. It will also work on normal cake moulds too!
