Almond Rochers

Christmas – Warmth – Thank You – Appreciation – Snowflakes – Cookies – Fruit Cake – Gift Exchange : These are the string of words that come to me when Christmas is coming 🙂 What about yours? It’s also the time when I will take some time to reflect the year past – the encounters, the people I met etc. And also about the plans for the new year.

I did a bit of everything for giveaway this year so some colleagues have Double Chocolate Biscotti with almonds and dried cranberries, some of them had the Mixed Berries Thumbprint Cookies / Chocolate Thumbprint Cookies and also the Almond Rochers. The chocolate are tempered to begin with, I did a mixture of Valrhona 55% Equattoriale Feve and 70% Guanaja so the bittersweet is just nice.

This is fairly easy to prepare except the tempering part so I have roasted almond silver + Valrhona Cocoa Nibs + Rum Soaked Mixed Fruits + Puffy Rice to form the almond rochers.
