Baked a batch of dark chocolate cupcakes for a colleague leaving soon. Fondant covered cupcakes is out, I guess they will probably find it too sweet? Buttercream is not the ideal media as it’s too sweet and creamy?
So chocolate ganache is the choice! It’s simple and yet delicious.
The cupcake base is made using Valrhona Cocoa Powder and the ganache is 70% of 55% Valrhona Equatoriale and 30% of 64% Valrhona Manjari. The cupcake base is fluffy light and the ganache is bittersweet. I tried one and it’s really good, definitely the best (occasional) treat!
