We are probably more familiar with agar agar or gelatin when it comes to dessert. Personally I’m not really a fan as I will prefer a more silky in the mouth texture and this is exactly what I like! It’s velvety smooth yet with a rich texture with the burst of sweety vanilla bean pods inside. Paired with a fruity, tinge of sourness from the red currant jelly. I would never have thought that jelly or jam could be pair in this way.
