Happy Mid Autumn Festival!

Strawberry Snowskin with White Lotus Paste, Pandan Snowskin with White Lotus Paste and finally Banana Snowskin with Durian Lotus Paste.

Using a new japanese style mould. A break from the usual mooncake moulds pattern. This is banana snowskin with white lotus paste and till date banana snowskin is my favourite! I love the light scent of banana.

I feel it should be a coordinated pairing so I went to get a bottle of Durian essence, already believing that it shld hv a fake scent BUT I was surprise that it actually smell quite “real”. Added a little egg yellow for easy identification, definitely not blue, purple – must be yellow!

Today’s mooncake session is for giveaway and own consumption. I wanted to try making Yam filling with Yam snowskin but the yam paste I got from KCT is flaky and I couldn’t wrap it up, couldn’t figure out what’s wrong too. I love yam – from yam paste or you call them Or Nee to Abacus seed. Shall find out what went wrong and make another attempt again. And I haven got the chance to try out some baked mooncakes (not the traditional type) recipes I spotted in the mooncake book. This couple of weeks is just testing mooncake recipes, fulfilling mooncake orders. And with the festival coming this Tues, I could say this year mooncake making session is finally closed!

Time to turn to my oven and mixer for new bakes!
